In Greece there are two types of souvlaki (kebob). You can get the fast food sort from vendors on the street like a hamburger, or you can get the gourmet kind at sit down restaurants. This is my version, and hopefully it would be judged as the latter type rather than the former.

This side dish goes well with just about anything. It’s quite simple to make, but takes a little time for the prep work.
Three to four large potatoes are usually enough to fill up one baking pan and generally feed about 4-5 people.

The traditional Greek salad consists mainly of sliced fresh tomatoes and cucumbers. There are a few other variables:
- Olives, Kalamata olives from Greece would be the primary choice
- Onions, thin onion slices sometimes go nicely
- Feta Cheese, crumbled across the plate
- Oil & Vinegar, drizzled over the salad

One of my latest pieces, currently on display at Frisco Square, is the first in a series of themed wall sculptures I am building. The photos I’m putting up currently aren’t that great, but I didn’t get to take proper pictures before the piece went on public display.
