Oven Baked Potatoes

This side dish goes well with just about anything. It’s quite simple to make, but takes a little time for the prep work.

Three to four large potatoes are usually enough to fill up one baking pan and generally feed about 4-5 people.

Here is the process:

  • Peel and dice the potatoes into about ½ inch cubes and place in a non-stick baking pan.
  • Pour a generous amount of olive oil over all of the potatoes. Move them around to make sure they are well coated.
  • Sprinkle oregano, salt and pepper over the potatoes.

  • Preheat the oven to 425, then bake for a total of 35 minutes, turning the potatoes every 10-15 minutes to prevent sticking to the pan.
  • If you like your potatoes extra crispy you can turn the oven to broil for the last 10 minutes and crank up the temp to about 500 degrees.
