This side dish goes well with just about anything. It’s quite simple to make, but takes a little time for the prep work.
Three to four large potatoes are usually enough to fill up one baking pan and generally feed about 4-5 people.
Here is the process:
Peel and dice the potatoes into about ½ inch cubes and place in a non-stick baking pan.
Pour a generous amount of olive oil over all of the potatoes. Move them around to make sure they are well coated.
Sprinkle oregano, salt and pepper over the potatoes.
Preheat the oven to 425, then bake for a total of 35 minutes, turning the potatoes every 10-15 minutes to prevent sticking to the pan.
If you like your potatoes extra crispy you can turn the oven to broil for the last 10 minutes and crank up the temp to about 500 degrees.
